Wow, the colour of that syrup looks amazing.I usually make damson gin at this time of year but there has been so much rain this summer that there have been no damsons on the trees. So no warming gin for Christmas.

I had only heard of elderberry wine.........I remember seeing them along the hedges where we lived when I was a girl in England.

Sigh... elderberry! I used to know where there were lots of these, but that was years ago and hundreds of miles away. (fun watermelon party!)

I would imagine a blueberry rake would work. They are quite common around here... being the largest producer of blueberries in the world and all... most are made of metal now, however you can find the wooden ones at flea markets etc. I believe Lee Valley may sell some thing like this too. ell

Okay, why didn't you tell me this before? I am LOADED with elderberries in the back garden and could not fathom making cordial or wine, but syrup sounds like the ticket.

If you have a chest freezer, you can just go ahead and put all the whole stems into a clean garbage bag or leaf bag. Pop it in the freezer. In a couple of hours when the berries are frozen, give the bag a good vigorous shake... and you should have all the berries in the bottom of the bag. It's not too hard to sift the berries from the bits of leaves and other things. The hardest part is finding a chest freezer with some empty space :)

Oh, so labor-intensive! I am romantically in love with the idea, but not sure I'd have it in me to manage it. However, if I came to your house, your syrup would not be safe from my sticky-fingered ways -- fair warning!
